The Itrana variety Gaeta olive is grown in the Gaeta region, which includes the villages around Aurunci and Lepini Mountains, among which is Cori.

Its slightly bitter tone combined with the classic acetic hint of natural fermentation completes it with a lively and distinctive aroma of old must.

The Gaeta olive is among the ingredients most used and appreciated by top international chefs.
